Cowboy Pie Recipe

Make no mistake, if like us at the practical gent you have children sometimes you just need to make something fun. There are hundreds of recipes for Cowboy pie out there, but this one is great for everyone.

For this you’ll need an oven proof dish big enough to serve 4 decent portions.

Ingredients

Mashed Potatoes

  • 6/7 Medium sized potatoes – peeled
  • 1 Egg Yolk
  • 50ml Milk (Any)
  • 50g Strong Mature Cheddar Cheese, Grated

Filling

  • 1 small brown onion, finely chopped
  • 2 gloves garlic, minced
  • 6-8 good quality sausages
  • 2 x 400g cans baked beans
  • 2 tsps Smoked Paprika
  • 2 tbsps BBQ sauce

Method

  1. Pre-Heat your oven to 180 degrees C
  2. Get a large pan of boiling, salted water on the go, boil the potatoes while cooking
  3. Brown the sausages in a pan with some neutral flavoured oil such as Vegetable or Rapeseed.
  4. Sauté the onions for a couple of minutes on their own.
  5. Add the garlic to the onions and continue to sauté for a few more minutes.
  6. Slice up the browned sausages into bite sized chunks and throw the chunks back into the pan.
  7. Add the Paprika and the cans of baked beans.
  1. Stir the bbq sauce through the beans and simmer for a couple of minutes until properly bubbling.
  2. While the filling is bubbling it’s time to make the mash. Drain the potatoes.
  3. Using a potato ricer squish the potatoes into a bowl. If you need a good quality potato ricer, we recommend one like this.
  4. Melt the butter into the riced potatoes, then fold through the milk and egg yolk.
  5. Finally melt the cheese into the mash and distribute thoroughly.
  6. In an oven proof dish add the filling.
  7. Add the mash on top of the filling
  8. Bake in an over for 20 minutes at 200 C
  9. Let it stand for a couple of minutes and serve portions.
